Apple cider vinegar vs. regular vinegar: what's actually different

Apple cider vinegar and distilled white vinegar are both roughly 4-7% acetic acid by volume, but they're made from different starting material — apples versus grain alcohol — which is where the real difference sits: trace minerals, malic acid and polyphenols carried over from apples, not a stronger acid.

Apple cider vinegar and distilled white ("regular") vinegar are both, by FDA guidance, at least 4% acetic acid — most retail bottles of either sit somewhere between 4% and 8%. Acidity isn't the main difference. What actually separates them is the raw material each is fermented from, and the trace compounds apples leave behind that grain alcohol doesn't.

How each one is made

Both are the product of the same two-step fermentation — yeast first converts sugars to alcohol, then acetic acid bacteria convert that alcohol to acetic acid — but they start from different raw material. Apple cider vinegar starts from crushed apples or apple juice; distilled white vinegar starts from grain alcohol, usually corn-derived, that's fermented directly to acetic acid without any fruit involved at all. That's the actual source of every downstream difference between them, not the acid itself.

What that difference in raw material means

Because apple cider vinegar is fermented from apples, it retains trace compounds carried over from the fruit: malic acid, small amounts of minerals like potassium, and polyphenols. By USDA FoodData Central figures, those amounts are trace — not enough to function as a meaningful source of any vitamin or mineral, and we don't make that claim for our product. Distilled white vinegar, fermented from grain alcohol, doesn't carry over fruit-derived compounds the same way; it's closer to a solution of acetic acid and water, which is also why it's reliably clear and colorless rather than pale amber.

Acidity itself varies by product and brand more than by "type" of vinegar. A lab study that measured the pH of 30 different vinegar varieties found real variation between them — from about 2.7 to nearly 4.0 — a reminder that "vinegar" isn't one standardized acid strength, whether it's labeled apple cider or white.

Can you substitute one for the other?

For cooking and cleaning, the two are broadly interchangeable at similar acidity — the main tradeoff is flavor: apple cider vinegar carries a fruity, slightly sweet note from the apples; white vinegar is sharper and more neutral.
