The actual numbers

Per USDA data, 100 g of raw beetroot (roughly two-thirds of a medium beet) contains about 325 mg of potassium. A medium beet, at around 82 g, works out to roughly 260 mg. The National Academies' 2019 dietary reference intakes set the adult adequate intake for potassium at 3,400 mg a day for men and 2,600 mg a day for women, from food overall — so a medium beet covers somewhere around 8-10% of that target, depending on sex. Foods with a bigger potassium footprint per serving include potatoes, bananas, white beans, and leafy greens.

Does beetroot juice have more potassium than the whole root?

Juicing concentrates some nutrients by removing fiber and pulp, but it doesn't add potassium that wasn't already in the vegetable — a given amount of beets juiced will have roughly the potassium of that same amount of beets whole, minus whatever stays behind in the pulp. We haven't found a USDA figure specifically isolating juice from whole-root potassium content, so treat any precise juice number with that caveat.
